Executive Chef Nicholas Bell stuffs corn tortilla shells with rotisserie pulled chicken breast; cheddar and Monterey Jack cheeses; fire-roasted tomato sauce; slaw made of cabbage, jalapeño, and cilantro; and salsa verde. He tops them with pico de gallo and cotija cheese. “People want fresh and light, but full-bodied flavors,” says Bell. Mission accomplished!
